State Fair at Home

I have been to the state fair every single year since I have been born. I was so bummed this year to year that the Minnesota State Fair was not happening. Instead they held a drive thru food parade. Unfortunately all the tickets sold out right away and I was unable to snag one. Jake and I decided to make two of our many favorite state fair foods at home this year over Labor Day weekend. We made a homemade pineapple Dole Whip float and Sweet Martha’s Cookies. Sweet Martha’s Cookies are sold frozen at local grocery stores in Minnesota. We have been able to find them at Lunds and Byerlys and Cub Foods in the frozen section.
We found a copycat Dole Whip recipe over at Belly Full that is super easy to make.
Ingredients
4 Ounces pineapple juice
1 Big scoop vanilla ice cream (We used more than this, around 3 big scoops)
2 Cups frozen pineapple chunks
2 Tablespoons sugar
Splash of lemon juice (we did not add this)
Pinch of salt
Instructions:
Combine all ingredients in blender and blend until smooth
Freeze mixture for about 40 minutes to an hour
After you take the mixture out of the freezer you can put it into a piping bag and swirl into a dessert cup or simply scoop it into a cup/bowl. At this point it can be served simply as the classic pineapple Dole Whip or you can add pineapple juice to make a float.
